New Belizean Brewmaster At Belikin

Before, we start our next story, we stress that drinking alcohol is for adults - and even they should do it only in moderation. But, that being said….there's no denying that this September, copious quantities of Belikin Beer will be consumed.

And for those who choose to imbibe the leading local brew -the taste in every bottle of beer you drink is the responsibility of the Belikin Brewmaster.

They've got a new one; we met him today, and found out what he does:..

These are the constituent parts of each beer and stout product Belikin produces: hops, malt, sugar and yeast. They are blended and cooked up in these kettles and fermented in these tanks - and the entire process is overseen by a brewmaster - who has been foreigner for the forty years that the factory has been in operation:

"Basically for that entire time it has been either for the most part German brewmasters that have operated the facility and responsible for the taste - taste of our beers."

And now for the first time in the brewery's history - there's a Belizean Brewmaster, Nolan Michael who's just returned from brewmaster training in Chicago and Germany

"The brewmaster is responsible for from the initial start of the process; extraction of fermentable extracts from malt, filtering, kettle boiling, and fermentation of the product. You are basically responsible for the entire process control to ensure that you get the best quality end product - best tasting beer."

And to ensure that it tastes right, he has to sample it:

"Sensory evaluation is a huge part of the process and that includes tasting of the beer. As such you have to have a very distinctive palette to discern different flavor profiles to know what that particular taste was cause by and there is definitely an art to it."

And he's expanding that art to a new line of seasonal brews - including a sorrel stout planned for December:

"Well quite some time we were looking to launch a new flavor and coming into Christmas time we are looking for a new product that gives the Belizean people a completely distinctive Christmas feeling - you know in Belize everybody always say 'let me catch the Christmas spirit' and we want to be a part of that. We want to be a part of helping the Belizean people to catch the Christmas spirit and after a broad testing and tasting analysis we finally found what we think will be a flavor."

And while that may be the world's first sorrel stout, he says it's just part of a whole new line:

"More localized flavors are coming out from us - more seasonal beers."
